Creamy Broccoli and Red Potato Soup


Creamy Broccoli and Red Potato Soup

Total cook time - 35 mins

                            Serves - 4

Ingredients

-3 tbsp Unsalted butter (you can sub vegan butter)

-1 Small onion , finely chopped

-2 Garlic cloves , minced

-4 tsp Corn Starch

-3 cups Milk (you can use real milk or unsweetened cashew milk)

-1 cup Gluten Free vegetable broth

-1 cup water

-1.6 lb Red skin Potato , peeled and cut into 1.25 / 1/2" cubes

-5 cups Broccoli florets (bite size) (about 1 large broccoli

-1 + cups Grated cheese , cheddar or Daiya meltable vegan cheese


Garnish, optional

Shallots/scallions , finely sliced

Grated cheese


Instructions

Melt butter in a large pot over medium heat. Add onion and garlic, cook for 5 minutes or until softened.


Cook for 30 seconds.


Add about 1 cup of milk and stir quickly, it will thicken quickly. Add remaining milk gradually, whisking as you go.


Add broth, water and potato. Bring to simmer, and cook for 12 - 15 minutes, stirring occasionally, or until potato is just cooked. If the soup gets too thick, add more broth (or water) - depends how rapidly you are simmering.

Then mix together 4 teaspoons of cornstarch / cornflour and a splash of water to make a slurry.  This will thicken the soup.

Add broccoli and stir. Cook for 2 minutes, then take the pot off the stove.


Stir through cheese (I use 1 cup). Adjust salt and pepper to taste.


Ladle into bowls and top with garnishes of choice.

A cozy night in...

When the weather outside is frightful I like to cuddle up with this , delicious and filling, creamy Potato soup!

A bowl of this soup, a great movie and some Blue Magoo Flower all pair together perfectly for a nice cozy evening at home, with no stress or anxiety.

So cuddle up with this rich soup, some great flower and your couch and just unwind! 

Also...You could easily dose the soup with Cannabis Olive oil or serve it as is.

---Creamy Kale and Potato soup with crispy Veggie Sausage ---

Makes 8 to 10 servings

Ingredients

4 Veggie Sausage Patties thawed and chopped
1 Tblsp Olive Oil (for cooking the sausage in)
1 cup parmesan
1/3 cup fresh chopped basil
6 potatoes peeled and cubed
3 cups chopped kale
2 quarts water
3 cups veggie broth
1 onion, chopped
4 cloves of garlic chopped
6 tablespoons butter or margarine
6 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
1-1/2 cups milk

Directions
In a large pot, cook potatoes, in water until tender, about 20 minutes. Drain, reserving some of the water from the potatoes and setting potatoes aside. In the same pot, saute onion and garlic in butter until soft.
Stir in flour, salt and pepper; gradually add milk, stirring constantly until thickened.
Gently stir in cooked potatoes, broth, and 1 cup or more of reserved cooking liquid, being sure to break up some of the larger bits of potato until soup is desired consistency.
Then stir in the chopped kale and let summer a few more minutes while you cook and assemble the soup toppings..
In a separate pan with
1 Tblsp of olive oil Brown and crisp the sausage, break it up in the pan so that it turns into crispy, browned sausage crumbles.
When you are ready to serve the soup top it with sausage crumbles, shredded parmesan and a little bit of basil.

This you could also be really great with a couple of drops of THC infused olive oil, which would make it a low dose edible without adding too much extra to the favors.
These toppings will add rich flavors to the soup, but if they are added in to the entire pot, they would lose their great  texture.
