Grilled Vegetables are so simple, taste and smell amazing, and add so much flavor to salads, pasta, or are great on their own.
I just sliced up some zucchini, and red onion and then tossed em in a bowl with some lemon juice, olive oil, and a packet of Italian dressing seasoning mix and throw it on the grill. I also did a skewer of my summertime favorites, blistered shishito peppers. Yummmm!!
After they were cooked I drizzled those seasoned and smokey zucchini medallions with some infused oil.
The herbaceous notes of full plant infused oil pair s so perfectly with the herb seasoning and fresh veggies.
They are perfect with hummus or on a sandwich.
If you don't have access to a grill, grill pans are amazing. I lived in apartments where I had no outdoor space for a lot of years and a good grill pan made it so I could still enjoy grilled summer dishes.
